Don Artemio brings back chile en nogada through October

Don Artemio has brought back a fall favorite, chile en nogada, a stuffed poblano that assured its place in Mexican history as part of a celebration in September 1821 of the country’s independence from Spain.

The dish, which appeared on Don Artemio’s menu last fall, will be on the menu through Oct. 15. The restaurant’s recommendation for a wine pairing: champagne. “It is a celebratory dish,” Adrián Burciaga, co-founder, said.

The pepper is stuffed with ground beef and pork, apple, pine nuts, pear, peaches, plantains and almonds, topped with a creamy nogada sauce and pomegranates, walnuts, parsley and spices such as cloves and cinnamon.

New Fort Worth brunch: T&P Tavern

One of the city’s newest brunches has popped up at T&P Tavern, tucked into T&P Station downtown. The Tavern, starting in August, began serving brunch 11 a.m.-3 p.m. on Sundays only.

The brunch menu includes breakfast classics such as a two-egg plate with your choice of meat, home fries or tots, and toast; Loaded Breakfast Tots; biscuits and gravy; huevos rancheros; and yogurt with granola and fresh fruit. Then there’s the funnel cake, with cinnamon, powdered sugar, fruit, candied pecans and whipped frosting.

A mimosa flight including a bottle of champagne or prosecco with juices is on the menu for $30.

The movie lineup includes “The Notebook,” “A Star Is Born” and “Crazy, Stupid, Love.” The concession menu includes a soft salted pretzel, the Hot Diggity Dog, pulled pork tacos and Nacho Libre. Bar options include a classic margarita, a TX Old Fashioned, wine and beer.

Standard Meat, Hardcore Carnivore team up on new sausage line sold in H-E-B stores

Feel like eating in instead of going out? Here’s a new choice. Standard Meat Co. of Saginaw and Hardcore Carnivore of Austin have teamed up to produce an exclusive line of hardwood smoked sausages that debuted in H-E-B stores this summer.

Jess Pryles, who developed the sausage recipes, created Hardcore Carnivore in 2015 with the launch of her Black spice seasoning. The Hardcore Carnivore seasoning line now includes various rubs, including Red for chicken and pork, and Amplify, a savory boosting powder.

“Creating these sausages was the next logical step for the Hardcore Carnivore brand,” Pryles said in a release. “All the flavors are designed to recognize and honor different aspects of Texas heritage, which is important for us at Hardcore Carnivore, and also important for H-E-B, a company with such a strong connection to their own Texas heritage.”

Pryles wanted to use real hardwood smoke, and she turned to Standard Meat and its co-president Ashli Rosenthal Blumenfeld for the solution.

“I had a relationship with Ashli as fellow meat industry businesswomen,” Pryles said. “So, when this project came about, I knew I had the right people to help me bring it to life.”

“Helping Jess achieve her culinary vision for these heritage-inspired sausages was a dream project for us,” Blumenfeld said. “At Standard Meat, we understand tradition.” Blumenfeld’s great-grandfather, Ben Rosenthal, started Standard Meat in 1935 in Fort Worth.

“It was the Standard Meat willingness to support innovation and really work with us that helped get the project off the ground,” Pryles said.

“Now, after two years of relentless pursuit to create the perfect smoked sausages, I am so excited to finally share our new product, available exclusively at H-E-B stores across Texas.”

The sausages are certified GO TEXAN by the Texas Department of Agriculture, and feature gluten-free ingredients, natural casings and a hardwood-smoked finish.

The sausages are available in Tex Mex, beef with beef brisket, jalapeno cheddar and prime rib flavor with beef prime rib.
